• 4 medium potatoes, peeled and chopped into chunks
  • 1# ground beef, cooked and drained
  • 1 can (10 3/4oz) cream of chicken soup, undiluted
  • 1 can (10 3/4oz) condensed vegetable beef soup, undiluted
  • 1 can Campbells ready to serve vegetable beef
  • 1 can kidney beans, rinsed and drained
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped yellow onion
  • 1 Tbsp chives
  • 1/2 tsp salt
  • 1/4 tsp pepper


  • Put all ingredients into a slow cooker. 
  • Let cook on low for 8 to 10 hours or until pototes are cooked through.

Special Notes:  I love to adapt this recipe and double it and put it into my 6 quart crockpot.  I love to throw in different beans and different kinds of Campbells beef soups.  I don't think I have ever made this the same.  It's a hearty, fun recipe that my family loves.  Great for cold days...
